THE BLACKWOOD 1200 is a commercial wood / gas burning pizza oven specifically designed for medium to large restaurants. Its parabolic shape and front flue allow the heat to be maintained longer, maximising efficiency and reducing fuel consumption by as much as 50%. By utilising a front flue ensures heat is drawn from the back of the oven to the front, thus retaining heat in the oven longer.
CONSTRUCTION / INSULATION Constructed from a refractory material which is compressed with a high alumina content that ensures excellent refractory characteristics, combined with a structural stability. Also having a double insulation surround ensures maximum heat retention and lower running costs. There are nine different colour surround options available to choose from.
With an internal diameter of 120cm, it can bake up to seven 30cm pizzas at a time with a constant optimum cooking temperature of 350 °c.
Cooking times range from 90 – 100 seconds, meaning two pizza chefs can maintain 100 pizzas per hour.
